I’ve been holding onto this one for a while- making some adjustments here and there. I’m a huge chocolate fan (like seriously) but I wanted to experiment with some of the Vanilla Vega Sport Performance Protein Powder I had. And what better way to do that than to make protein bars? With bananas? And peanut butter?
But of course, what protein bar isn’t complete without some peanut butter?? Now while I’m sure you could use regular peanut butter with without any problems but I decided to go all the way with this one and use some seriously amazing White Chocolate Wonderful.
This stuff is ridiculously good and while it probably won’t sit well with peanut butter purists (and there’s a place for that too- just not in this moment) is really is some special stuff.
It’s basically a dessert.
But it’s peanut butter.
Which can essentially be the same thing.
So you know, give it a try.
Banana Nut Vanilla Protein Bars
2 Ripe Bananas
3 TBSP White Chocolate Wonderful Peanut Butter
2 Scoops of Vanilla Vega Sport Performance Protein Powder
3/4 Cup Rolled Oats
1 Cup Almond Milk
1/4 Cup Sunflower Seeds
1/2 tsp Cinnamon
1/4 Cup Coconut Flakes
Preheat your oven to 350 °.
Peel and mash the bananas thoroughly. Add the peanut butter and mix well before adding the the protein powder, oats, almond milk, sunflower seeds and cinnamon.
Pour into a lightly greased 8x8in pan and sprinkle coconut flakes on top. Bake for 30 minutes or until a toothpick comes out clean. Allow it to cool before eating and enjoy!
