Strange things happen in the kitchen on Sundays. Or at least in my kitchen they do. As previously discussed Sundays are typically my day for food prep. It’s also my day to clean out the fridge or at least to attempt to make use of items that are waiting around and possibly getting old. Food waste will not do in my kitchen!
Seriously, nothing bothers me more than wasted food (I’m a great friend to have around when you go out if you want your plates cleaned- I put food away like it’s my job. I really do eat a ton)
In some cases, such as this one, I just throw together a bunch of random items into a pan, pretend I’m Goldilocks and play with seasonings until it’s “justttttt right”! That being said, many of the ingredients can easily be subbed for something else, such as rice instead of quinoa, black beans instead of pigeon peas, broccoli florets instead of asparagus…you get the jist.
So you know, relax, have fun and throw some stuff together ’cause it’s time to friggin’ EAT!
Four Corners of the Earth Everything Bowl – Serves 4-6
3/4 cup Butler Soy Curls
1 TBSP Soy Sauce
1 TBSP Balsamic Vinegar
3 dashes Liquid Smoke
1 TBSP EVOO
2 Cloves Garlic, chopped
1/2 Yellow Onion, chopped
1 tsp Tomato Paste
1/2 Orange Bell Pepper, chopped
1 Small Poblano Pepper, chopped
4 Crimini Mushrooms, sliced
7 Asparagus Spears, cut into 1 in pieces
1 Tomato, chopped and drained
1 cup Quinoa, cooked
2/3 cup Pigeon Peas, cooked
2 tsp Za’atar
1/2 tsp Sumac
1/4 cup Cilantro
1/4 cup Chopped Dates
1/4 cup Raw Pepitas
Put soy curls into a bowl and add soy sauce, balsamic vinegar and liquid smoke. Set aside.
Heat oil in a large pan and add garlic cloves, onion and tomato paste. Cook for several minutes until soft, then add peppers, mushrooms, asparagus spears, tomato and soy curls. Saute for several minutes until veggies are cooked through then add quinoa and pigeon peas. Season with Za’atar, sumac, salt and pepper. Fold in cilantro, dates and pepitas and serve!
