Who doesn’t love French Toast? I mean, really? Thick, sloppy bread drenched in maple syrup (in case you haven’t noticed, I’m a big fan of drenching things in maple syrup) and cinnamon? Count me in for sure! Anytime, anywhere and I’m down!

I’ve seen a lot of vegan French Toast recipes, especially with awesome things like The Vegg being avaiable and all. But honestly, most of them aren’t really protein based. Which is fine- it all depends on what you are looking for, but in this case, I was looking for a way to uh, “protein-ize” it. You know, just because.
This took a decent amount of playing around with (I was actually trying to get something else to work instead of bread to make it low carb but we’ll leave that for another time. I’m still hoping to get it to work as a recipe eventually) but I think it works and is very delicioso~ When you add tons of cinnamon to something though, you can never really go wrong…
Cinnamon Spice Protein French Toast – Serves 4
1 Day Old Baguette (cut into 3/4-1inch thick slices)
3/4 Cup Almond Milk
3/4 Cup Water
1 Small Banana
1 Scoop Vanilla or Spiced Chai Protein Powder
2 tsp Cinnamon
1/2 tsp Nutmeg
2 tsp The Vegg (optional, but it will turn out better with this)
Pinch of Salt (if you have Black Salt, use it instead for more “egg-y-ness”)
Toss all ingredients except bread into a blender. Blend until smooth and pour into a large rimmed dish. Dunk in bread slices and soak for several minutes on each side until saturated.
Heat a sprayed non-stick pan on medium and add toast. Cook for several minutes on each side (don’t rush it before you flip it!) and serve warm. Top with fresh fruit, maple syrup or whatever else you like (peanut butter, anyone??)
